Single class cipher in 2 is... Complicated. At low levels they're absolutely terrible and fights are usually over before they can build up enough to meaningfully contribute.
At mid levels their routine is paralyze, attack until they can paralyze again. It isn't worth doing anything else.
At high levels, they faceroll and the fights aren't fun.
Now a thief/cipher multiclass, that can be a lot of fun out of the gate. Especially the cipher speciality with the annihilation focus dump attack.

Priests... Ugh. Didn't like the implementation of priests in either game, and with limited selections for abilities, they're even worse in 2. Plus you get one as your second companion if you feel you need their tiny selection of useful bubble buffs. Hard pass.

Druid can be fun, and their specialities really change how they play. It's been a while though, so I don't know what the balance state is between various transformations and just using a weapon.

Barbarians are... Fine. With a broken build in there somewhere, iirc. Some of their specialities are just bad, however. Eater of the dead was designed by someone who thought the fights would be very long (when they're actually absurdly fast) and the anti-magic barbarian is a pile of negatives and no meaningful bonuses.

Of those four (and assuming single class), I'd go with Druid. You may need a follow up vote on specialities/subclasses.
