Greetings hivemind, I wanted to use my terminus ultra land raider but while doing the list why can't I find it in battlescribe unless I choose unbound army? I am still confused with its legality too!

In Battlescribe you have to use it in an Ultramarines army or successor and in a battleforged army it can only be used in a super-heavy or super-heavy auxiliary detachment.
It is a legends unit so it is still legal for play but likely won't be updated again.

Correct me if I am wrong, but I have to choose 1 roster with 2 detachments then, for example battalion and super-heavy auxiliary detachment? I just get confused when selecting the battle size, for a 1000 points battle do I just choose incursion in the battalion detachment or do I have to select anything in the super-heavy auxiliary detachment apart from the Lord of War?

You have it correct. You only need to put in the battle size in one detachment, doesn't matter which one.
Each detachment needs the chapter selector and the command cost and one needs the battle size.
