If I have a unit that started the game with 3 models and it is reduced to 1 model can it still get me engaged on all front points? (Starting strength of 3 or more models)

Does it require a unit that's at or above half its starting strength?
If yes, then you cannot. 1 is less than half of 3.

Or more than half?

A qualifying unit is one that has a starting strength of 3 or more models, or one that contains 1 or more vehicle or monster models.

Then you can do it with a one-model unit, provided it originally had 3+ models. (Or is a vehicle/monster.)
