I recently stumbled about the entry on some seemingly extinct Abhumans called "Thugrock Goliaths" who seemed to have been recruited into the Guard when they were still around.

Sounds like a modelling project with potential. Does anybody know more about that? Could these be AoS Giants, or more some kind of Ogryn size thing or maybe like the Necromunda Goliath Gang?

Looks like they only feature in a background blurb from the digital Dataslate: Officio Assassinorum from 2014, so there isn't anymore information about them than what is listed in that wiki article. So, you're probably free to represent them however you want.
