So, I recently got into an event in 40k at my store and boy was it intense! While I had fun I really thought I could perhaps use a more shooting army. One that could have a chance against tanks as a lot of my models got shot off the board. So, I have some ideas for what to look for with the money I'll get from friends and family.

1.I could just add more dakka to my Orks, perhaps some Mekgunz or a Battlewagon? Anything that will allow me to deal with tanks or help buff my Boyz?

2.I'm considering Necrons, even if they're not as powerful as they were at the start of this year. I have some warriors I've traded and I always sort of had a love-hate relationship with the oldcrons. I may try to make a shooty Necron army due to the fact a lot of Necron models are on sale at my LGS.

3.I wanted to go Death Guard, but it seems I simply cannot find anymore Death Guard models at my store. Amazon also takes forever too, but perhaps I could go this way?

4.They did have a Thousand Sons codex at the store, but I couldn't find the models.

5.I have the new daemon codex so I could soup Chaos or just go with daemons who are very fast or very tanky.

6.I could try getting the new Astra Militarium stuff, (I wish you could play Renegades and Heretics), but I would be fine sucking up my Chaos fanboy pride to get one loyalist army!

I wanted to get into Age of Sigmar, but almost nobody plays them at my store and it would be hard as hell to find a player. Which is fine, because 40k is expansive but still.

So you want to deal with tanks, via shooting, with an Ork army.
You need 3 ingredients to do that.
1) AP - even more important now than it ever was as it seems everyone's sporting AoC or the like. Damage that doesn't get through isn't damage....
2) High str/high damage. So S8. Rokkits are a flat 3 damage, KMB are d6. I like the KMB as it's got a higher AP & a 50% chance to do more damage per shot than the rokkits.
3) Most importantly? BS. You have to hit the target. Because shots that don't hit don't cause damage.

As the resident Grot player I'm going to recommend you take a look at two of my favorite units:
Got Tanks & Grot Mega-Tanks.
A minimum squad of Grot Tanks (4) can sport 4 KMB & throw out 4-12 KMB shots at BS4.
a Grot Mega-Tank? It can carry 7 KMB! That's 7-21 KMB shots at BS4.....
Neither of these will cost you a fortune pts wise. $$ is another story - but it's Orks, so you can scratch build reasonable versions of each.

I also highly recommend the Wazbomb.

Just have the shop order you whatever's needed.
As for Sigmar? If you build demons you can also use them for Sigmar.

Just be aware that Demons have changed somewhat.

In the Old World the demon army was almost identical to the demon army for 40K so the only difference was the bases.

Today the Demons are on the same bases that they are on in 40K so that is easier, but whilst the 40K demons are still all in a single army, in AoS they are individual. Furthermore they mostly have a good contingent of human worshippers and unique models that don't appear in 40K now.

Now you can still go full demon and you can still go almost fully mono-god with 40K, just be aware its a niche so you might find it has some weaknesses compared to multi-god approaches.

I'd say, if Necrons are are on sale, go for Necrons.

Nothing wrong with starting a new army, but you might still end up getting shot off the table with another army if you don't make tactical adjustments to how you position and play on the board so maybe consider how you can use terrain to your advantage and limit when and where you push your units in the open. Tricks like wrapping enemy units in combat and tagging vehicles or other dangerous shooting units can also be just as effective at limiting your opponents ability to interact on his terms without even killing anything.

As far as the armies you are considering, I'd really only consider the Guard as a shooting focused army. Thousand Sons live and die by their psychic phase, Death Guard really deal their damage in melee, Demons are going nuts with flamers right now but aren't really an exceptional shooting army, Necrons ranged anti-tank options are pretty pathetic and too inconsistent and their best units are melee oriented (and their winning strategy is essentially score points early then get tabled).

My thoughts that unless you just really want to try something different, stick with your orks and just keep getting reps in and you'll figure things out.
