If I were painting space marines that didn’t bother painting their ceramite one of the colors of the rainbow, what color would it appear? Is there any background that establishes this?

Gunmetal. The Fists Exemplar from the War of the Beast series are described as wearing plain Ceramite armour and its just gunmetal.

Correct me if I am wrong but I remember reading that the reason that the Grey Knights are called that is that they don't paint their armor and leave it in it's natural color.

Also I think that bare ceramite is suppose to be more grey then gunmetal.

Ceramite can probably be coloured with additives in the same way as auramite.
