If I was to do a conversion army of trophy hunters/big game hunters of the 41st millennium which faction would fit this the best? Just an army out there hunting the biggest monsters they can find and having trophies from their expeditions

Isn’t that the whole theme of the new beast snagga orks?

Catachan jungle hunters (or any deathworld guard) could also work.

Maybe Deathwatch?

Khorne (bigger skulls for the throne!)

Aren't Dark Eldar about finding the most interesting and nasty stuff for their arenas?

Custom40k Homebrew - Alternate activation, huge customisation, support for all models from 3rd to 10th edition

Designer's Note: Hardened Veterans can be represented by any Imperial Guard models, but we've really included them to allow players to practise their skills at making a really unique and individual unit. Because of this we won't be making models to represent many of the options allowed to a Veteran squad - it's up to you to convert the models. (Imperial Guard, 3rd Edition)

White Scars. That's a significant portion of their schtick.

"Kor'sarro Khan is the khan (captain) of the 3rd Brotherhood (company) of the White Scars Space Marine Chapter and is also the Chapter's current Master of the Hunt. Fierce to the point of savagery, bold to the point of recklessness and brash to the point of insubordination, he is nonetheless one of the Chapter's most accomplished warriors."

My WHFB armies were Bretonians and Tomb Kings.

I thought they "hunted" enemies though; not necessarily big critters. Like, they go on the hunt for that one chaos lord or farseer who really screwed them over a couple decades ago. Sometimes their quarry happens to be physically larger like a daemon prince or whatever, but that doesn't seem to be a requirement.

When I think big game hunters in 40k, my brain goes to:

* Beast Snagga orks
* Space Wolves (who literally hunt big game and krakens for sport and historically end up with lots of monster-hunting special rules)
* Mmmaaaaybe drukhari. Mainly bored rich types like Sliscus, but also wyches seeking bragging rights. In psychic awakening, wyches had a subfaction trait specifically for this.
* Notable mention to Rogue Traders. The Fantasy Flight RPG series had a beastiary book that was framed as an eccentric Rogue Trader's list of hunting exploits.

ATTENTION
. Psychic tests are unfluffy. Your longing for AV is understandable but misguided. Your chapter doesn't need a separate codex. Doctrines should go away. Being a "troop" means nothing. This has been a cranky service announcement. You may now resume your regularly scheduled arguing.

I pretty much skipped anything that wasn't going to be on the table top to shoot at - which meant enemy commander and big monster type stuff.

The Lord General character from Dawn of War 2 Retribution was a foppish xenos trophy hunter who used his military campaigns as an excuse to go around finding giant creatures to kill.

Space Wolves are big game hunters. They have a lot of trophies around the fang of lokal creatures like dragons and krakens they have slayed.

They even try to forge mighty sagaes in their name. They have two mechanical for it: Saga of the Warrior born is when you kill a mighty opponent. Saga of the Hunter is when you kill a monster/big vehicle.

There should be many feral worlds from which to recruit, either for hunters or hardy tribes people like Medusans.

I could even seen a Kroot squad of hunters. Or squads of abhumans, Ratling snipers and scouts, Oygrns.

The story "the curiosity" by dan abnett, in the collection "the magos", includes a unit of mercenaries specializing in big game hunts. They specialized in capturing exotic and dangerous beasts for arenas, and in the story had been hired by the noble lord of an imperial world to hunt and kill a monster. (The whole story reminded me if the IRL beast of gevaudan incident.
