How many of you mix up the vehicle loadouts in your games? Like how many Predator Destructors and how many Predator Annihilators go into a single unit? How many Stormhammers do you put in with your Baneblade squadron? Does a mix of weapon loadout improve your odds? Is it better to tool everything as a single purpose unit?

I don't do it, just because it slows down an already laborious game even more having to break down stats and dice rolls within one unit. I also think it's unreasonable to expect an opponent (especially the age demographic I am in ) to identify a lascannon or auto cannon sponsor variant on an 8mm mini from across a 4ft board. So I'd rather go through the list with an opponent before the game and do a 'this is this' etc.
That being said if you're playing the game a lot and have time to break down units there are definitely advantages to sometimes doing it, so YMMV.

Yeah, I find it much easier just to have like for like in single units.

Single unit, single purpose. That’s my preference.

most of my Leman Russ are single loadout, my Marine tanks are variable, common primary weapons but a mix of anti armour and anti infantry secondaries

I try to avoid it. For gaming simplicity but also because in the Heresy era mixed loadouts generally were not that common. Most units are mono Loadout, and not seen many mixed vehicle squadron references.

Coming back to this super quick. I now have a mix of Sicaran Hulls (four Lascannon, four Heavy Bolters) so I now have at least the option to mix it up in a squadron.
Still don’t think I’d mix main weapons though. But having a bit of AT or Point Defence in an otherwise fairly dedicated loadout seems to make some sense.
