Hi,
I paint just by brush(no room for airbrush setup) and have been experiencing a problem for a while when it comes to varnishing.
The varnish tends to bubble and foam when applying it, this wouldn't be a problem if the bubbles popped but they linger on, even
when the varnish dries. and the model is left with pockmarks.

I use acrylic varnishes, some are a little better than others but I can't seem to get rid of the bubbles completely. I've thinned them down with
Water, working on the theory that if I delay the drying time it would give more time for the bubbles to pop, but it doesn't work.
Has anyone experienced this and came up with a solution, or even is there an additive I could use with the varnish?

Don’t thin your varnish.
It sounds counterintuitive but just get your brush damp, wipe most of the water off and apply it straight and unthinned. That should fix it.

Agreed. The foam appears when the varnish is thinned down, in my experience.

I know that pen-torch, hair dryer, heat gun, are used to pop bubbles for resin pours.
In case of bubbles, try giving it a pass with a hair dryer to see if the bubbles will pop from the heat.
