I remember back when Warhammer Fantasy Beastmen got their army book (6th or 7th edition) and people had Pestigors, Tzangors, Slaangors, Khorngors.
So, why are there only Tzangors in 40k? I was actually surprised when I found out they were in 40k, but also surprised they didn't bring "all flavors" of the gors.

For the same reasons as always
1) GW hasn't got round to releasing the others
2) GW hasn't got infinite production capacity and the others didn't make the grade past other options
3) No designer in the team wants to make them so they just aren't made
4) Other stuff got in the way
5) They are designed, ready to go but no one can get a production slot for the
And a bunch of other reasons too.

The biggest reason appears to be: admitting that there aren't enough Thousand Sons to justify their own codex.
Thousand Sons became a separate faction right around the same time they were breaking up Chaos in Age of Sigmar. In fact, I think Thousand Sons got their not-quite-a-Codex just before Disciples of Tzeentch became a thing. So they just decided to toss the Tzaangors into the Thousand Sons. The biggest evidence of this is that there is a separate (even sold separately!) sprue for Tzaangors that has the pistols and chainswords. The kit was clearly only intended for Age of Sigmar, and the 40k use was an afterthought.
Now, you have to keep in mind that older versions of both 40k and WHFB had unit entries that had no official models. Pestigors and Khorngors DID actually get models at one point, but they were discontinued fairly quickly. All four units were, literally, Bestigors with the appropriate Mark of Chaos as opposed to separate unit entries.
Since the near-simultaneous release of Disciples of Tzeentch and Thousand Sons, GW has become more aggressive in separating model lines. So, while Slaangors have appeared for Hedonites of Slaanesh, they haven't crossed into 40k (despite the extreme anemia of the Emperor's Children codex). Pestigors JUST made a return via Warhammer Quest, and got added to Maggotkin of Nurgle; but since Death Guard have a healthy range that includes Poxwalkers, I wouldn't expect to see them cross into 40k.
Someone mentioned Fellgors - they're just standard Beastmen, but with chainswords.

Sounds like they could have made one box, Fellgores/ Imperial Beastmen, with an upgrade kit that could have been for each chaos god, Tzangors, Pestigores, etc.

I mean its neat that the mono-god legions have an easier time of including their partner daemons. Its not neat that there are more daemons sheets than there are marine sheets. And its not just the chaos legions, they didn't make enough for Custodes, or Votann either. GSC are on the edge. Part of their schtick is to hide in plain sight while corrupting the "government" so its actually fluffy that they can take Guard as their datasheets. But they could probably use a couple more.

I don't think multiple detachments are a thing anymore? But yes that was the compounding/exacerbating factor. The problem is not having enough datasheets that are their own. Only being able to bandaid it once just makes it worse.
