Remember don't paint any Cav horses grey.
The US Cav primarily used Morgans.
The US Cav would not purchase/breed greys.

Yes you are correct in that the vast majority were not grey (primarily as they could be seen too easily and spotted further away by enemies).

Unless you are painting E company of the 7th cavalry who rode all grey horses after Custer reformed the colours of horses for each company to allow officers to more easily see what companies were doing what on the battlefield.

Also the 6th Cavalry.

This practice was not normal in war time as attrition made it too difficult to keep up the correct numbers needed of each colour.

And musicians/buglers to help them stand out in battle

These are for a skirmish game set in the Old West called Dead Man's Hand, where we assume these fellows are operating somewhat beyond the bounds of formal, if any, orders.

And if a troop needs some horses and it rides bays, but the only ones available are not bays, you're going to take the horses.

This is fantastic news, I’ll be making a pledge for a couple of boxes of these.

I hope ‘Renegade Apaches’ and ‘Banditos’ (both on foot and mounted) are also not far away.

Great Escape Games are doing really excellent plastics and great skirmish rules for westerns.
