I know it has that one Flayer planet Drazak. And apparently the Ghoul Stars have some abnormally horrifying xenos. But other than that, the region is a blank space. So I was wondering if there were any official 40k stories set in the Ghoul Stars?

Not that I know of. Its mostly a place that horrors come out of. Its the extreme edge of the galaxy, far far from anything else important.
