Eating someone is no big deal, though distasteful to our eyes.
You can reason with Kroot, and sometimes Orks and sometimes even Dark Eldar.

The only ones in 40k that I consider irredeemably evil are the Dark Eldar, feth those guys.

The rest is simply doing what they are meant to do, fight and survive in the mess that is 40k.

THis is bugging me way more than it should, but please don't mistake Sentience, the ability to feel, with human-level (or greater) intelligence, the ability to learn and adapt to difficult situations. All Kroot (presumably) are Sentient; since no Kroot are mentioned to be emotionless murderers, we can safely assume that they are Sentient. However, not all Kroot are intelligent enough to be classified as intelligent on the same level as the Tau or Humans.
