I'd forgotten you'd mentioned this. I should have visited there earlier because that house had over 1000 chickens in its basement. It's what has been the source of sporadic lag on the server for some time.
I've now culled the chickens and the lag is no more. To whoever owns this house, you can repopulate it as long as you don't have it set to auto-dispense eggs without some method of also auto-killing the chickens. For now I have disabled the redstone connected to the dispenser.
To others on the server, please don't make infinite-mob generators (whether they are chickens, villagers, or other things), as it often leads to lag on the server when left unattended.

you couldn't reach the sheep in the back to sheer them, and the ones in front tossed their wool towards the back. The sheep like escaping when the gates open so I put carpet on the fences so you can get all the sheep.
Next I put a dirt row down the walk ways, if the middle sheep ate all the grass there was no way for it to regrow.
