Ironclad assault launchers give assault and defensive grenades, does this mean my ironclad can throw a frag grenade and get the defensive grenade stealth bonus?

Yes it can throw a Frag grenade instead of firing one of its weapons.

Or am I missing some rule that it cant?

if its got defensive and offensive grenades .. well yeah it can throw a frag, the Deamons book specifically disallows the bonus of the grenades and only effects assaulting and being assaulted, cant see the restriction in the marine book.

Better question, why would you want to?

Simple enough reason. It does not have Frag grenades. It has Assault grenades (which can still be thrown just has a different profile).
