Ironclad assault launchers give assault and defensive grenades, does this mean my ironclad can throw a frag grenade and get the defensive grenade stealth bonus?

No to the Frag grenade, yes to stealth.

Yes it can throw a Frag grenade instead of firing one of its weapons.

Or am I missing some rule that it cant?

if its got defensive and offensive grenades .. well yeah it can throw a frag, the Deamons book specifically disallows the bonus of the grenades and only effects assaulting and being assaulted, cant see the restriction in the marine book.

Better question, why would you want to?

Because it's fun and/or funny, mainly. The normal weapons on it are probably better in most situations.

Simple enough reason. It does not have Frag grenades. It has Assault grenades (which can still be thrown just has a different profile).

That teaches me for not reading the rule more closely then
