Personally, I would go for at least five. Your own experiences may vary on that, of course.

I dont really see the point in taking a Jetbike over a normal bike. Sure you can turbo boost longer and you can ignore some difficult terrain.
But now you are allowed armour saves on dangerus terrain so its not that bad for normal bikers.
And you get +1 Toughness saving you from ID from melta and most fists.

About the number of bikes, take as many as you can. Bikers for 20p each is really nice.

Rule of Cool? Every army can afford to have one frivolous use of points just because it's awesome. Unless you got nuts, it's not going to break the bank as it were. You can still come out with a very good list.

I'm more taking it due to the sequence in First Heretic where the word bearers bike squad is led by a sergeant on jetbike, I'm just running it as a normal bike its just cooler!
