I had a depressing night...the most depressing since I went on that weekend retreat a while ago...leaving me bitter and lonely about the world, my parents, and people in general, and the realization that the ideals I seek IRL are dead and unattainable. So I want to revise my statement about becoming a Daemon Prince to be 'the best in something'; now I just want to create my own world, and destroy everything else.

Depends who was offering and what I had to do to get it. In order from least to most likely to accept if they were making the offer: Nurgle, Khrone, Tzeentch, Slaneesh. I mean, if I had to murder a bunch of people to ascend, I probably wouldn't do it because they are the frickin Chaos Gods, who's to say that I'm going to make 10 million sacrifices only to have them ascend billy from down the street? But if I just have to be a manipulative dick or throw a couple of good orgies, I'd be on that.

Hrm.. if I have untold powers and dominated the planet, wouldn't I also be stuck with all the work of making sure it runs well? Holy crap that's gonna be a lot of paperwork. If I trust my senchal, that means he's really ruling... blah, with great powers comes great responsibilities all over again.

So the question isn't so much "would we accept daemonhood." its."If we knew it was a possibility would we attempt to ascend?"
In which case no. You are far far far far far more likely to simply be killed while trying to attain it. Not only that but if the gods are going to give you a couple gifts on your way up you might just become a spawn instead.
If the option was "here you go, just because i like you, you get to be a daemonprince" then sure. But working toward it? no thanks, staying human is the much safer option.

Once you;ve become a DP you lose a lot of the risks associated with worshiping Chaos, I don't think the Gods give you mutations anymore (and even if you do, you can probably remove them) and the risk of being consumed by Daemons is removed as you yourself are stronger then the vast majority of Daemons out there. You gain fabulous power, immortality, and your own realm to rule, seemingly able to do as you please. There aren't many drawbacks, which is why so many are obsessed with achieving it.

Daemonhood all the way, I know it would make me a completely different personality but just to be able to twist reality would be so much fun. The never ending stairs for those I don't like... or the never ending corridor for those who make me laugh, with a different 'partner' in every room. And of course I guess i wouldn't mind being able to execute a plan 100s of years in the making just to make my old boss fall out a window, ya know one of those butterfly flaps its wings, breeze knocks boss out of 5th floor window...

I'll stay human. My body is my own, it's mine, it is me. It's a fantastically complex machine that, despite it having been instrumental in ruining my intended career plan (dietry stuff into military will not go), I find I am incredibly fond of it. I would not trade it for the world.
As for the immortality bit - well, great, you're sticking two fingers up at death but knowing me I'd get so damnably bored with the whole universe at my fingertips as a playpen because I would not know what to do with myself. I'd rather stick with being mortal and dieing when I die.

It also allows you to act in an arbitrary fashion or in a fashion for your own personal gain.
So my question is, to what extent does daemonic ascension grant you power, and to what extent does it limit your freedom of will/choice and where can I read up more on this? Fluff-wise, I mean.

That assumes there is such a thing as a soul. Also, if you're an uber-powerful Daemon, who's going to force you to kill your loved ones? What if you protected them instead?

And they don't have to know what they don't need to know; one can just assume a Human facade when interacting with them. All the world needs to know is that 'you' and the monster that rampages every now and then are two completely different things.

Let's see... if, as a normal citizen in the 40k universe, I was offered instand Daemonhood? Yes. That universe sucks too much, Ilike immortality.
If Tzeentch popped into my study and offered Daemon hood to me, at this moment, I would decline. I'm too religious to accept that. But take that away, in a 40k real life setting? Hell yeah, gimme the Prince treatment!
EDIT: Also, would depend on my patron. Tzeentch or undivided I could roll with. But with my current omniscient knowledge that I have as an observer of 40k, I would decline Nurgle or Slaanesh. Khorne too, but tempting.

To be honest, if I was sitting on my bed, reading a book, and Tzeentch appeared before me and offered me daemonhood. I would accept it in a heartbeat. Many things would happen in my rampage.
Things to do as a Daemon Prince of Tzeentch:
1. Write a long list of best selling books, most likely murder mysteries, that no matter what happens, you never seem to figure out just who did it...
2. Take over Hollywood, and then create a string of Inception sequels..., along with a ton of other cliffhanger movies, which will then earn me Oscars, Emmys, and Globes out the wazoo.
3. Take over every school in the world and flip the social ladder so that nerds are the rulers and jocks and cheerleaders are on the bottom rung.
4. Slowly change the thinking of vegans/vegetarians and the rest of the world so that their ideals are reversed...
5. After slowly confusing the people of the world with these complex plans, I will make a big red button, that when pressed, will reverse time to the point just after I ascended to Daemonhood, with no memory, to do it all over again.
All shall worship the Daemon Prince who heralds Change.

I'd become a Daemon Prince of Nurgle, probably. Nurgle is God of hopelessness and cynicism. Depressed people with no real hope or plans turn to Nurgle, because he's the God of living in the present. Nurgle is the God of #YOLO and Carpe Diem. Nurgle is the God of Death, which drives people to live their lives to the fullest.
Daemon Princedom doesn't have much affect on your personality, as far as I'm aware. The only downside is that you constantly need to worry about maintaining your God's approval. If he stops empowering your new daemonic body, you just disappear.
Being a Khorne Daemon Prince would suck, because Khorne gets angry easily. Being a Tzeentch Daemon Prince would suck, because Tzeentch is an optimist and believes all change results in good things. Change like, changing you into a wormy thing with three face that sheds hair all over the place.
With Nurgle, your position would be pretty stable. As long as you aren't doing a terrible job, he'd keep you around.
