Is it legal in the rules to take double force org, and an allied detachment at the same time at 2500pts?

Like say, I have a double force org chart of IG 2000pts, would I be able to add a 500pt Space Marine ally detachment to that?

yup. some say you may use two Allied detachments.

Indeed, the answer is on page 109.

The short run down though is allies are always your choice, you are not required to take them by any of the rules stated in the book. The Allied Detachment section of the that page outlines how you take allied detachments, should you desire to do so. It uses words such as 'can include' to indicate the choice is yours, as long a you do not go above the maximum number of allies allowed.

In your case you have the choice of having between 0 and 2 allied detachments, so you can decide to take a single allied detachment should you wish.
