If a platoon command squad takes a medic, and than blobs up with multiple infantry platoons, does every model in the blob
benefit from the medic?

Only the basic Infantry Squad has the "combined Squad" rule.
So you can't join Command Squads, Special weapon Squads or Heavy Weapon Squads.

Every unit in a Platoon starts off as a separate unit. ONLY infantry squads can then join up.
