I was wondering can I switch from playing daemons in 40k and fantasy? And how easy or difficult is it to do?

It's possible if you magnetize the bases. Will take a lot of extra work, but you get two armies for two different games.

Alaitoc Eldar: 5000p

I've based all my Daemons on the 40k bases as squares just look really out of place in 40k and can cause some measuring issues due to the corners.

For Fantasy, it's not really a problem as the modular movement trays you can get from GW still have the outlines of the basic 25mm bases on the trays, so ranking up and determining base-to-base in combat isn't much of an issue at all.

However, you do have to be somewhat mindful as not all the 40k bases match-up with Fantasy counter-parts. For example, in 40k a Beast of Nurgle uses the large 60mm circle base, but is only mounted on a 40mm square base in Fantasy. Easiest thing to do is mount your Beasts onto the Fantasy base and then build-up a slot or such on a 60mm round base it can sit in.
Likewise, Bloodcrushers & Plaguedrones use the new Monstrous Cavalry base in Fantasy, meaning you'll likely want to put them on that and then build-up a proper sized 40k base for them to sit on when playing 40k games.

In terms of modelling it is rather straightforward. If you put a magnet on a models foot, you will be able to create both 40k and Fantasy bases for each one. It would take a bit of time to complete but not actually anything difficult. Just be mindful of how they would rank up in Fantasy.

In terms of competition it gets a little more difficult, because what works in 40k is not necessarily any good in Fantasy. I cannot speak for Fantasy but in 40k terms, most of the book is very balanced. The only units to really avoid would be the Burning Chariot, Khornate Princes, Hellflayers and some of the Herald-level special characters. You can probably string something together out of the other choices so it would be easiest to go for units that work in both game systems.

For Fantasy, the only things that really work are Nurgle, Skull Cannons, Nurgle, Ambushing Khorne puppies, more Nurgle, LoC, min Furies, Nurgle, Burning Chariot is okay'ish, Soul Grinder and of course, Nurgle!

Slaanesh can be made to work thanks to a pair of solid magic lores and really fast units, while mono-Tzeentch is decent if you can ensure you get 10-12 power dice phases every turn.

Overall though, Nurgle is tops and is the most reliable route you can take in Fantasy.

I've heard people say you can use the older LOTR movement trays perfectly with the round 40k bases for daemon armies. There's probably aftermarket solutions around somewhere as well

The WotR trays won't be legal as there's too much spacing between the slots, meaning your units will not rank-up properly.

The modular GW Fantasy trays work well enough because you can still make-out the outlines of the square base footprints for proper corner-to-corner ranking. Even more-so if you spray the tray plate itself black, and then white line all the groves.

Unless you are going in for tournament's or something, most people will be cool about you using the square bases in 40k.

Square bases look weird to me when they're not ranked up.

Litko sells movement trays for ranking up round based models:

You could just base the dudes for 40k but put them in these for Fantasy.

Also note that you CAN play with the square bases in 40k because the rulebook states the model just has to be based on what ever base is provided with the model, since they come with both square and round bases the choice is yours, however the fantasy book states they require strictely square bases.
