Why? What source of food is there for them? Wouldn't they just starve to death for lack of crunchy red space marines?

I believe most Space Hulks have other inhabitants, such as Orks, Chaos cults and pirates.

well they can easily hibernate for decades, maybe longer. Space Hulks often gain the attention of other species. some humans want to scavenge for lost tech or some Orks just want to catch a ride. some space hulks still have malfunctioning warp drives that can send them to random parts of the galaxy so on the off chance they end up on a planet or even just pass close to one they can attempt to spread themselves amongst the population in preparation for a Tyranid invasion that might take centuries to arrive.

From ABD's The Core ( http://wh40k.lexicanum.com/wiki/The_Core_%28Short_Story%29#The_Core), you get an idea of what the Genestealers are dealing with on a Space Hulk.
The short of it, They hibernate and await fresh meat to come aboard the hulk. It also means that they're pretty darn hungry when they wake up.
I can also imagine that there's some sort of space rat/bug that lives a pest's life on a moon sized ship that they could eat.
