I've been wondering this recently, and cant think of any particular chapter that hates Tau above other races, any ideas?

Pretty sure alot of the marines that really dislike Tau are from every chapter that has worked in the Deathwatch.
They preform missions againgst tau on a very frequent basis and have marines from every chapter.
I dont believe any single chapter has alot of dealings with the tau other than ultra-marines, since they live in each others backyard, and the ultra-marines dont hate em since they helped each other with the tyranid threat.

That stronghold was ridiculous! That and the Necron complex with the bomb, always struggled with that as IG.
On topic, I'd guess some of the more zealous/xenophobic chapters like the Templars. There's the Deathwatch of course, but they aren't a chapter as such.

I guess Brazen Claws or Novamarines (which ever has the anti-xeno crusade) since before Dark Crusade they attacked Kronus in Damocles, but failed to dislodge them.

That it was. That's why I never bothered with going above Easy difficulty. Well, that and I suck at RTS's.
As above, Templars aren't all that diplomacy-oriented as far as Xenos are concerned. The upstart Tau fall squarely into that basket.

Just want to add in something that might help.
Way back in the days of history when it was just Codex: Tau there was a pretty good description of the Damocles Gulf Crusade where the Imperium tried to dislodge the Tau threat (admittedly it wasn't much of a crusade, mostly consisting of whatever spare forces were available at the time). That crusade contained a ton of Impereal Guard, some titan legion support, and space marines from a chapter nobody has ever heard of called "scythes of the emperor". The Tau pretty much do what Tau do and fought tons of really nasty draining hit and run attacks while retreating deeper into their space until the crusade over-extended itself and ground to a really nasty stalemate. The Tau then let them surrender and leave peacefully because that's what Tau do.
Being involved in a failed crusade against what was supposed to be a xenos species of minimal threat, then actually having to surrender to said xenos...I bet the Scythes of the Emperor are still pretty bitter about that one. Automatically Appended Next Post: Actually I just looked it up, apparently the Scythes are more concerned about squashing bugs these days to care about Tau. Here's a list of evrey chapter involved in the crusade. What I said about the scythes would be equally valid about any of them. (guess who's favorite angry marines are on the list)

Iron Hands
Novamarines
Scythes of the Emperor
Subjugators
Ultramarines
White Scars

Wasn't it stated in the Damocles Crusade that a lot of the Imperial forces involved gained a grudging respect for the Tau as they fought on, because the Tau at least fought honorably? (hit and run is generally seen as a valid warfare tactic by most). Or is that just fandom?

IIRC the Marines wanted to continue the fighting till the bitter end against the hated Xenos - it was the Guard and Navy and the Inquisition (after getting the call about the Tryanids) who decided against further war of attrition.
All Marines hate Xenos and want to kill them on sight.
Thats why they are "Battle Brothers" with the Tau..........and of course not just to sell more models......

It's usually the opposite everywhere else though - the Astartes Hate them - they may make a temporary alliance on the battlefield but they are still Xenos scum to be killed when convenient - its the same with the Eldar, except the Tau are more likely to honour their side of the bargin  depending on the exact wording if the Water caste are involved.

Leaving out the fact that the Tyranids started doing their thing kinda makes it look as though the Tau had the upper hand. They didn't, it was a stalemate. The reason the Imperium retreaded was because the Tyranids are a much bigger threat than the Tau.

That's the thing though, it doesn't imply they aren't still enemies. However, it does imply the Marines view them as honorable and worthy foes. In the Tau they see themselves reflected, at least in the Fire Caste. So, where as when fighting alongside Eldar they always keep one eye on the Eldar for treachery, with the Tau they can go about their business without worrying about a shot in the back. Next battle they'll worry about shooting it out with the Tau.
The allies chart may not always make sense, but the Tau being able to ally with everyone to some degree, and Imperials and normal Eldar as Battle Brothers makes the most sense. It is kind of the Tau's MO. Black Templars and a few similar chapters, maybe not so much, but the bulk majority? Sure.
