- What is the availability of Caledonian Volunteers and Troupes Metropolitains (Métros) in the General Ariadna army list?
Both belong to Ariadna Militia that has AVA 2, so you can take either 2 Caledonian Volunteers, two Métros or one of each.

Is this correct
I am not reading it this way in the quickstart rules. So if the availability of something is 3 you can not take 3 of those and also 3 of another unit that has availability 3 too, but you can only take 3 from among everything on the army list that has availability 3?
For starting groups of players this will be a big mess.

No. Basically, Metros and Volunteers are a special "Militia" unit- they are treated as one unit for a generic Ariadna force, but separate units for sectorials.
Grey Rifles and Mormaers, however, are two distinct units, and as such you may take two of each.

Where do you see that? I'm looking at their profiles on the army builder and such and not seeing any indication that they are "Militia". I see they are listed as "Garrison" units, but I don't see anything that says that Garrison units share AVA or whatever.

I've been meaning to ask about AVA as well. So, when it says a unit has AVA 1, like say the Void Vector Operators for instance, that means I can only take 1 of those units in my army? I can't have more even if I want more? And if it says AVA TOTAL, does that mean I can comprise a force entirely of that single unit type?

Yep. AVA is like infinitys force organisation chart, telling you how many of a unit you can take.

It is in the back of "Human Sphere".
Volunteers and Metros are labeled as "Ariadna Militia" with an AVA of 2 for the vanilla lists.

So does the same go for everything with the same ava, or this is just an exception because they are "Ariadna Militia" and "Ariadna Militia" happen to have that rule?
For example, I wouldn't be able to take two Yaogat and two Gwailos in my CA list because they both have ava 2? And having both a Sogarat and a Noctifer in the same list is not allowed because they both have ava 1?
If it goes for everythingt hat is just stupid Imo.

In general, if something makes you go 'that is just stupid' in Infinity, you've misread it or it's badly written.
Volunteers and Metros don't have their own individual AVA values in a vanilla Ariadna list, they share the same AVA 2 between them. Another example of this is most of the Knights in PanOceania or Dog Warriors/Cameronians in Ariadna but it's a pretty rare thing.
Two Yaogats and two Gwailos is fine because they each have their own individual AVA 2 in their profile.
Barzam - yes, only one Vector Operator but any number of AVA Total units to the limits of your points and SWC.
chaos0xomega - list builders are helper apps, they are not definitive and they often take shortcuts in displaying the more complex AVA interactions, for the sake of the programmer's sanity...

...About that - what's the AVA rule with PanO knights? TBH I've not really gotten any MO things (whilst having bought pretty much everything else by now) so haven't had to look into it yet, but it does make me wonder now. Couldn't really find it listed clearly - is a concise version of those rules available online anywhere?

MO knights have a different AVA setup to vanilla PanO.
You have so many of X order (ONE order), for MO, and then you may have y "confrere knights" (knights from brother orders - ie the rest of them ).

You can have 4 knights of one order, up to 2 knights from any other order (the confrere knights). In addition, you may have up to 6 magister knights. So you could have: 4 Hospitallers (order) Up to 2 from these orders (1 each from 2 or 2 from 1) Teutonic, montesa, sepulchre. 6 magisters. 12 knights. Going to cost you a crap load of points, though. You wouldn't see it much in games under 500pts.

The MO lists first turned up in the back of Human Sphere (gave a list of what units were available to the sectorials and what their AVA changes to). The lists were reprinted for Paradiso (back of the army list section) - some sectorials were altered with newer units. The sectorial lists and their altered AVA for those units are in the pdf downloads for the army lists for both books. Like Aquila guard in Neoterra being AVA3 as opposed to AVA1 in PanO, or Fusiliers going to AVA5 instead of total, but Auxilia going to TOTAL. With Vanilla, it's one knight (order OR magister) as they are ALL grouped under the one AVA.
