Is landing gear a thing for Tau anymore? Its like they updated and upgraded everything in the new Tau book except they forgot to add in the simplest of technology….

Does not exist, and has no point. The only reason the rule existed at all was because the 4th edition skimmer rules had some drawbacks that you might wish to avoid by landing (for example, different LOS rules compared to ground vehicles). Now that the rules the landing gear rule interacted with are gone there's no reason to keep the old 4th edition relic. A Devilfish can still "land" in the fluff and unload its troops, it just doesn't change its rules anymore.

The landing gear rule was meant to stop fish of fury, but because of the new skimmer rules, it is not need any more.

Wasnt it also a way to prevent skimmers from wrecking so easily? i seem to remember skimmers were a lot easier to wreck due to something like an immobilize result than they are now, since it only happens if you went flat out these days.

I even modeled them off of my fish since they arent a thing anymore. Always thought they made the fish look dumb so i hacked off the leg and glued to the foot to the bottom lol.

This. Previous rule sets had a mechanic that would wreck a skimmer that moved too fast and then got immobilized. By "not counting as a skimmer" you could remove this penalty for being a skimmer.
