Which caster @ 35 points pSev vs pKreoss
Here are the lists I'm considering running @ 35 points. 'Jacks have to stay, everything else is flexible (for a slow grow league). These are very similar lists and really only differ by the inclusion of the covenant thanks to Sevvy's extra 'jack point. In both cases I'll probably have the Bastion Seneschal marshall the repenter.

The Covenant of Menoth (2pts)
High Exemplar Kreoss (*5pts)

I'm really split on these two, so any input would be greatly appreciated.

Out of those two, I'd go pSevvy with that list. pSev can make better use of the Revenger node, and his eye of menoth spell helps to pick up the whole list. pKreoss is great, but he's crying out for a few long range pieces, to take advantage of his assassination potential, and the basic battle box just doesn't give him that.
For your next kit, I'd recommend getting a Heavy kit (either one) for some nicer 8pt heavy options, and grab the merc solo "Rhupert Carvolo, Piper of Ord". If you get those, you could drop the Repenter to upgade the Crusader to an 8pt jack, and throw in Rhupert to make units Tough (this stacks really nicely with Defenders Ward and the Covenants no-knockdown ablity). Good call, I will make Rhupert my next addition as I've heard a lot of good things about him especially with regards to Errant synergy. These two casters are definitely my favorites (on paper at least, have yet to play with Sevvy) and seem to work well with all units.
I think I'll also get a heavy kit, a redeemer, and a vigilant as the vigilant seems like it would be spectacular for delivering a bastion unit + seneschal up the middle and the redeemer seems like a great fit with pKreoss.

Honestly, the Vigilant can be alright for holding/contesting zones, being cheap but tough, but I'd generally just go with a Repenter - better damage output, and can run with your Bastion Senechal very well - the Viglant doesn't deliver him any better really, as Girded usually is not needed for high-arm multi-wound models anyway.
Now the Redeemer, that's a good choice. It makes pKreoss a thing instantly, enabling a very good ranged assassination with his fea if paired with another Gun Jack (reckoner or Vanquisher). It can run with pSev as well, though without the knockdown feat, it's generally only for infantry clearing (but with POW 9 Blast, it does that exceptionally well).

Would two redeemers be too obvious? lol I do have a Vanquisher (w/e comes in the two player box) so I wouldn't mind running that. That's definitely something I'll check out... Thanks for the input, anything else you see/would like to recommend? What you see above (plus vanquisher and a cinerator unit) is the extent of my Menoth army ATM, but I don't mind adding stuff slowly.

Ah, you do have the Vanquisher - because you had the Revenger, I thought you might have gotten the regular battlebox. The Vanquisher is an excellent jack, and you'll generally find you'll get a lot more out of it than the Crusader in most lists (there are some, like Harby's theme force, that love Crusaders however). As you have him, I'd definitely recommend going for a Reckoner as your next Heavy kit.
Two Redeemers is generally a bit of overkill, and runs you smack bang into your focus cap. They are absolutely focus hogs, generally wanting two focus a turn for their ROF 3 and often a spare focus to boost damage if you happen to drift onto a solo/other juicy target. One is generally sufficient, though once our Journeyman warcaster (Tristan Durant) is released*, he seems like he'd be excellent for running another one, or possibly just taking one off your main casters hands.
On the note about focus, do look into getting some wracks. They're basically a free focus a turn for a point, and that one extra focus can make a huge difference. They're also great as they can fill in that one point in a list, without having to go for the max choir (which is generally unneeded).
*An exclusive Tristan model has been released in the Warmachine: Tactics kickstarter, but a normal model will be released for him sometime in the next year.

Fair enough on the revenger. I got the two player and bought the revenger separately. Since this was a slow grow league, I liked the flexibility that starting at 11 points brought vs starting at 13 but still wanted the extra models from the starter set (wish it had been bastions vs cinerators tho). I do plan on getting some wracks and I'll look into a reckoned kit as well.

Cinerators aren't terrible, they just work too similarly to Bastions, and Bastions fill the roll better. That said, I have seen people go for a Heavy Infantry list using Bastions and Cinerators with Vindictus, who actually makes them decently fast. Another thing people sometimes do is order Bastion arms (in metal) from PPs bits section of their online store, and just turn them into more bastions. Depending on your location though, that might not be economical (overseas shipping rates are horrible).

I didn't realize they sold bits, awesome. Unfortunately all I saw were the bastion seneschal arms, no standard arms. Also, kinda OT, but do you know how PP is about replacing damaged stuff? The errant unit I got had a melted crossbow (which I didn't find til I had already cleaned up all the mold lines) that I'd rather just get replaced vs swapping the whole box.
