I can't imagine an entire turn in 5mins for just about any size game.

If, for example, someone has 60 shooting attacks and he rolls each of the 60 dice at once, and I see that, he gets a Yellow Card offense.
It's deliberate slow play and very poor sportsmanship.
Rolling a single dice for individual characters is ok. Rolling many dice dice after dice is slow play.

No there's nothing wrong with it at all. Not only do I do this, but in almost every single situation I can think of my opponent has too. This one is a normal thing to do and if someone gave me crap for it I'd tell em to chill out.
i thought this tanking tactic was obsolete with the 'hits always wound the closest model' rule?

Yeah, this is the way it's supposed to work. Characters sit at the front and tank wounds unless they're powerful enough to drastically hurt the character, or the character is down to 1-2 wounds. 2+ Look Out Sir helps quite a bit in this regard.
