Technically red. I say technically because Games Workshop officially retconned it because they didn't like green.

As far as my own head-canon goes, brown seems most realistic.

All blood is brown after it's seen the business end of a bolter, citizen.

But yes, Ork blood is red, because green blood is damned hard to paint on green skin when doing injured models. Official reasoning.
