Let's say that Sorscha casts Freezing Grip on an infantry unit and makes them stationary. They can't activate on their turn, can't be engaged, etc but they have no way to shake it. My next turn rolls around. At what point does the effect go away? If I activate Sorscha and want to cast Freezing Grip on that same unit again, are they DEF 5 still from being Stationary, or does the effect expire when I activate her so it's a normal hit roll again?

Essentially is it possible to freeze a unit and keep it frozen by virtually auto-hitting it after the first time?

There are 2 mistakes in this conversation. First, Sorcha's Freezing grip lasts 1 round not 1 turn. Second, the effect wears off at the start of the casting player's next turn (page 42 Hordes Mk II).
It is very important to distinguish round from turn since rounds end at the end of the active player's turn. Things that last a turn end at the start on the active player's next turn.
