After playing Space Marines for awhile, and I've decided to switch armies, however. I'm on the fence on either going to play Imperial Guard, or Grey Knights. I know little about both armies, however I do know that Grey Knights field little models, but they are all psykers, and quite powerful. Imperial Guard on the other hand field many models. I'm not quite sure which would be better to play for fun, not competitively. Any help is appreciated, and thanks for reading.

Well, what do you like the look of better? After all, you're going to have to paint a bunch of models.
What made you want to switch from Space Marines? If the small, elite nature of Space Marines was what was bothering you, Grey Knights are definitely not the right decision. If you're just growing an army, I'd figure Guard are the better option. They can ally with the Space Marines and give you a firebase while your Marines move up, at least until the army's big enough to play on its own.

I suppose the questions to ask are what kind of army do you want to play? Space Marines are the swiss army knife of the game, so if you switch armies you'll face issues.
What is it about Marines that you don't like, or what is it about them that's turning you away from them?

IG have tanks. GK do not have tanks. Play the army with tanks.

I don't really like the fluff or low model count. However with the Grey Knights, I like their fluff and their model look. I do like both the fluff, look and model amount of the Guard, I'm just afraid of buying an army that be difficult or only have one or two ways to play it.

If you're not afraid of price point, then I'd go with IG. They have a lot of everything. They have Psykers, they have decent and plentiful infantry, they have artillery, they have walkers (Albeit maybe not the best, but hey! They look Star Warsy!), fliers, and they have tanks. Lots of tanks, and arguably the best tanks in the game. You can play them as a gunline, armor wall, or play air force. I'm haven't played them personally (I only play Orks), but every IG player I've faced tend to have a blast with them. And it's always fun for me as an Ork player to try to blow up their tanks or break their gunlines. Feels great!

IG definitely. Grey Knights are fun, but are pretty much excluded to Dreadknights, SM allies, and lots of psykers. IG can play a lot of different things, and bring LOTS of tanks.

Then Guard are the army for you! What I love about them is that basically, if you can think of a playstyle, guard can do it. You want waves upon waves of Infantry advancing to the beat of Artillery batteries to the rear? You can do it. You want a highly mobile elite taskforce of veterans in tanks and fliers? You can do that too. You want a deep striking spec ops force with a bunch of Stormtroopers? You can play that.
Basically, Guard have so many ways to play, especially if you're just out for a fun game, that you'll never get bored. And you can always add some GK allies down the road!

To me I see the real question to ask the OP, is do you want a low count model army, or a high count model army?
As an example, with my IG force for the cost of 1500 points I can fit 2 platoons of 35 infantry each, 3 Leman Russ Executioners, 2 Heavy Weapon Squads with 3 Heavy Weapons Teams each, a Basilisk, and a juiced up Lord Commissar.
With Grey Knights, you can get 2 Terminator squads of 5, 2 squads of Infiltrators, a Dreadknight, Lord Draigo, and Castellan Crowe with with a Squad of purgation. So you might have about 30 models total give or take a few, for a typical army list.

Option 3. Play Imperial Guard with Space Marine allies. Of course, price is a big issue as well. Grey Knights are expensive, sure, but Imperial Guard are so many repeat buys to get the numbers up. Leman Russ tanks alone are going to cost a pretty penny. So, Guard with Marine allies let you use your current models, shift some tactics to a more fluffy scenario and overall have fun with the armies again as you move to a full IG list.
