Outside of playing eldar in 5th edition I've only ever played SM armies.
GK and DA are my main armies right now.
They are fun and I can win with them but they suffer from lack of variety. I want an army I can collect, build a new list weekly, have fun, and compete with. The problem I have is Eldar are my next favorite army and have a lot of variety but I feel like playing eldar kinda makes you TFG because they are glaring OP. What would you go with?

It seems to me that you have gone with the highly elite armies so far, (ie. Few model count armies.) You might like to try a Horde army next for your collection. If so, I would recommend you give Orks, Tyranids, or the Astra Militarum a try.

The Tyranids are the Horde choice that leans towards more assault flavor. The AM/Imperial Guard are the horde choice that leans more towards a shooting/gun line army. The Orks are somewhere in between the 2 extremes.

Buy the codexes first to get a feel for them. And theN make your decision. Any of the above choice you make, you will probably pay twice what you did for you elite armies. More models is more $$$.

I was loking at orks but like you said it probably costs 1500$ to get an ork army rolling :(

Maybe Imperial Guard? You could try running a mech sort of list. If you like tanks, it shouldn't be too expensive to get a decent sized army built up. Leman Russes would also be a good way to try out something different every time, what with the numerous ways you can kit them out.

A bit of a biased response though as I'm currently collecting them and having a lot of fun with them. I personally haven't played any army other than SM, IG, and a little bit of Tau in the past.

I had a frustrating time with lack of CSM variety until I went over to Daemons primary. There are a lot of options and different builds and most units have some sort of place.

Tyranids can make for a decent horde army relatively cheaply.

The Bundles here are not a bad spot to start.

The Wrath of the Hive Mind box is $165, the models in it would be about $210* individually.
The swarm Box is $170, the models would be $276* individually.

*There is a little bit of estimation as boxes of gaunts come in 12s so I took (29/12)*20 to get a usable value for the models.

Those boxes give a great start to a Tyranid army, all with models that can be very useful. i got 2 Wrath of the Hive Minds and 1 swarm to form the base of my army.

Blood for the bloo... wait no, I meant for Sanguinius!

My favorite units in the nids are warriors and I already have 3 of them from the deathstorm box and a carni. Can warriors be killers? or are they only primarily used for support?

They can be useful, the big thing they are used for is a decent number of the formations require them. They are also fairly cheap multi wound synapse creatures who can take a nice gun for very cheap. More can always be good you can also convert 1 of them to be a prime(HQ) who is rather nasty as he bumps an entire units of warriors ballistic skill.

Tough to say. I would go with a Horde army, as noted above. Tyranids and Orkz would probably be the funnest, as IG are still a little too close to SM for my liking.

The hive tyrant is a lot of fun to assemble, I will admit I acted like a little kid with a toy plane after finishing the flying hive tyrant.

Genestealers/warriors and normal CC gaunts are by far the coolst out of the range IMO but the "monsters" just dont appeal to me :( I like the previous nids

hey dude, if you really like eldar then do it!

we like an eldar player who doesn't engage in wave serpent spam, jetseer councils or wraithknight formations. (i hear there's an apocalypse formation of wraithknights which i'm glad my eldar playing mate hasn't managed to find a copy of..)

i've got to mention 30k though - the mechanicum taghmata list is good, you can build an admech army for much less £ than a 40k army and it's got a real nice aesthetic to it. plus you can switch allegiances between loyalist and traitor from game to game allowing you to play any chapter while 'forging the narrative'...

http://www.walmart.com/ip/Loctite-Super-Glue-Easy-Squeeze-Gel/24972951 works great, fairly fast drying and not runny. The bikes seemed to assemble very easily for me.

Shooty nids is the best build for Tyranids though, before leaning yourself into assault nids. I think the problem with people disliking Tyranids because everyone thinks they're an assault army.

There is wisdom to this method. It is easy to ally SM with AM, and vice versa. That is until you could field the IG by itself, if you choose to.
