Your likely only going to get off one shot with it, no matter what gun you choose, before you charge into an assault.
The Storm Bolter is free, but only 2 S4 shots.
The Melta Gun is S8, but only likely to kill a single model.
The Heavy Flamer can cause significant casualties , but has the shortest range. Absolute murder against targets with 4+ armor saves.
I go with the Heavy Flamer myself. With luck, you can cause multiple casualties in the shooting phase and then finish them off in assault.

Pick what you're attacking before the game starts. Is your Dreadnaught a tank killer? Then a Heavy Flamer would be a horrible option If you're facing anything other than Dark Eldar and Orks. Then you want a Meltagun and save points with the Bolter because it just doesn't matter. If you want to kill Infantry, get rid of the Meltagun because again, one kill or the possibility of many with the Flamer? Pick a role and build it for that role.

I usually go with the heavy flamer and melta gun. That way it can wreck what ever you send it at. The storm bolter is pretty useless unless you plan on running the guy all around the board. Which would be very ineffective. You need to put him in a pod with a magna grapple and then send him at what ever is causing you the most problems that game. Especially because he is only front armour 12 instead of 13 like the furioso. Which in my mind for the same points is the better option.

Many kills from a flamer can cause you to fail your charge. On a DC dread, that's bad.

If you put blood talons, a storm bolter, and melta gun on it you can choose to take it as a troops choice as Cassor the Damned.

You can but shred really isn't isn't worth what you pay for and you have much better options for troops, unless you want to run as may dreadnoughts as possible.
