So, I know that, as per the rules, models that have assaulted a vehicle don't count as being locked in CC, so they can still be be shot at, the vehicle can still drive off, etc. But how does that apply to the actual squad itself? If the vehicle either can't move or chooses not to, how does it affect things like the squad's shooting, etc? Would it be:

a): the squad is still, for all intents and purposes, locked in combat, and must stay in base contact, unless it uses 'Our Weapons are Useless', 'Hit and Run', etc.
b):the squad is only in CC as long as it is in base contact, and can freely walk away from the combat if wants to, and must do so if it wishes to use it's ranged weaponry that turn.
c): the squad is no longer in CC as soon as their assault phase ends, and can move and shoot normally. (If this is the case, how do things like the bonus for charging work?)
d): something else that's probably very obvious that I haven't thought of.

This has mostly cropped up with my obliterators (for whom case (b) and (c) are pretty much the the same due to SaP), the rules mention the squad isn't locked in CC, but then mentions that if the vehicle is still there the squad stays in combat (I think, if I'm reading the paragraph right).

I believe what you're looking for is found under 'Successive Turns' in the 'Vehicles in the Assault Phase' section of the rules.

That was the section I was looking at the, it's the phrases:

Enemy models that are in base contact with a vehicle (not including Walkers or Chariots) are not locked in combat and can therefore be shot during the Shooting phase.

and

Units that still have models in base contact with a vehicle during its Assault phase may attack it again, just as in a normal ongoing combat (including all models that would count as engaged in a normal assault).

in the same paragraph that confuses me. The first suggests that they can do whatever they feel like, whereas the second suggest they are in a normal ongoing combat and therefore are stuck there (in fact it just mentions that for the vehicle's next assault phase, not for the squad's, which confuses me even more).

You are not locked in combat, however, if still in contact, you are given permission to attack it.

Greebo had spent an irritating two minutes in that box. Technically, a cat locked in a box may be alive or it may be dead. You never know until you look. In fact, the mere act of opening the box will determine the state of the cat, although in this case there were three determinate states the cat could be in: these being Alive, Dead, and Bloody Furious.

Ah, then am I right in thinking then that it would be perfectly fine to move 2" away from the vehicle and then charge it again to get the bonus attacks? (i.e. you'd only stay in base contact your next turn if you risked getting overwatched by the vehicle?)

Yes.
But vehicles can't overwatch.

If I sound like I'm being a condescending butthole, I'm not. Read my reply as neutrally as possible, please and thank you.

Got confused with 'Supporting Fire' there I think, but in that case I think my oblits would have bigger worries than snap shooting

I think you are also confusing whose turn it is referring to. In your example if your obliterators charged and immobilized or the vehicle decides not to move, then during your opponents turn your opponent gets to shoot at your obliterators because they are not lock in CC. Then as happyjew said because you are in b2b with the vehicle in your opponents assault phase you can attack it again just as if a ongoing combat. Then if said vehicle is still alive you can on your turn move back and shoot and charge normally.
