All,
Is there any impact from movement on a unit embarked upon an open topped vehicle for shooting puposes? Along the same lines, does the open topped vehicle jinking impact the unit (it says causes the vehicle to snap shot, but what about the embarked unit?).

None at all. A vehicle being fast, open topped etc has no impact on how an embarked unit fires.

So I could move cruising speed in movement phase, then flat out in shooting phase, then shoot the entire embarked unit all after jinking the previous turn?...

No. Please see 'Fire Points' in the rules for Transports in the main rulebook.

I'm at work and dont' have my rulebook. I'll check it tonight though. I thought there had to be some kind of limitation on it though, otherwise certain units could be moving 36+ inches, and dropping a ton of firepower straight into the heart of the enemy deployment (think rapid firing embarked units with high BS).

As we said, open topped or fast has no impact on who can fire. The fire point rules set limitations on how far a transport may move and the unit inside can still fire .
