The Unstoppable special rule changes the effect of the Instant Death rule, but the attack still has the Instant Death special rule, and so you cannot take FnP against it.

Hmm, hard to say actually. If you take an unsaved wound that has the instant death rule you can't take feel no pain.
Unstoppable uses "instead" to describe how it works. So instant death becomes d3 wounds from the perspective of a gargantuan. Meaning it would still take a feel no pain.
But I think the whole "inflict" thing is worded awkwardly. I would play it as: The allocated wound had the instant death rule and still has, you only replace the effect of loosing all wounds with taking d3 wounds instead. So in that case you would not get the feel no pain roll.

If it uses "instead" to describe how it works then it doesn't matter, the speical rule name is still instant death even if it doesn't instantly kill the model and wounds with the instant death rule doesn't allow for FnP, is the same interaction as Instant Death and Eternal Warrior, it doesn't kill the model, it only makes 1 wound instead but you are not allowed to take FnP

Eternal warrior and unstoppable are worded differently. Eternal warrior explicitly says it changes the effect. Unstoppable is more vague imo. I think they meant to say the same thing though, but I can totally see if somebody were to argue that you may take a feel no pain role.
You could ask why they worded it differently if they have the proper wording in the same book, but that's just GW being GW.
I would make sense to one up eternal warrior for a gargantuan creature, so feel no pain would make sense intention wise in that case, but then the d3 part makes no sense.
**scratch that. Unstoppable mentions attacks, so this replaces instant death with d3 before you even hit, but I'd still go with no feel no pain.

That's what I meant, only that is a replacement effect for instant death. As in: an unsaved wound from this weapon causes d3 wounds instead of 1.
But like I said, I don't thing that's what unstoppable is supposed to do. I agree that it's meant to still be an unsaved wound witht eh instant death special rule exaclty like eternal warrior, but instead of of only taking away 1 wound, this time it takes d3. So it's basically an eternal warrior lite with the added protection of removed from play.
I'm just sayingthat I could see how one could interpret the rule differently.

The interpretation is incorrect because it's ignoring the fact that the unsaved wound still carries the Instant Death special rule, which is all Feel No Pain is concerned with and not the actual impact of Instant Death.
