I was curious (since I play them, but don't own them) what allows Tau to fire every weapon they can strap to their suits as opposed to the single weapon system that their type (infantry) would generally indicate?

I believe Tau battlesuits have Multi-trackers as standard, which allows them to fire one more weapon than usually allowed.

With any Battlesuit smaller than a Riptide, the maximum is 2 weapons. The Riptide can fire 3. So it is possible.

Do note, that a Crisis Suit can carry 3 weapons modeled and fire them all, but 2 would fire as 1 Twin-Linked weapon.

Or more, true. There are some who don't like to commit and so put all the bits on the Crisis Suit.

I wonder if they would just field Obliterators as Havok Squad members... A Heavy Weapon Team would look like the Punisher's wet dream...

Base sizes are very much different. Unless you're playing with the old "skinny" obliterators which shared the same bases as marines.
