So if there is a unit within melee range of an enemy unit, can the unit still shoot in the shooting phase AND close combat?

Further to that point, can other units charge a unit already in combat?

The only thing you have to take into account is Line of Sight from each model. In many cases this won't be a problem. But in a huge scrum you might not be able to see models in the middle.

But a Bloodthirsty and other Big Monsters? easy to see and they can't hide from shooting by being in close combat anymore

For charging, you need to be able to get within 1/2" of the the unit to charge, whether it is in combat or not.

....and lo!.....The Age of Sigmar came to an end when Saint Veetock and his hamster legions smote the false Sigmar and destroyed the bubbleverse and lead the true believers back to the Old World.

You can't shoot in the combat phase, only the shooting phase. From the rules p4, paragraph 2:

"Missile weapons can be used in the shooting
phase, and melee weapons can be used in
the combat phase."

I think he meant one of these three:
1. "can you shoot and then fight in close combat?"
2. "can you shoot to a unit that is in close combat?"
3. "can you shoot if the shooting unit is in close combat?"

The answer is always yes.

4. "can a unit shoot at a different unit than the one it is in close combat with?" - Also yes.

As noted above the only thing to keep in mind is that a model can not shoot through any unit other than their own. This includes other friendly units so aviod the mid table swarm until it becomes advantageous to do so.
