There isn't a really good way with the "main" factions, but in the new "minor factions" book, you'll find rules for "shattered clans" of evil humans. Alongside rules for ratmen, lizardmen, and other minor races that happen to come up...

Are we taking Warriors or Demons (or both)?

There is a not-Chaos list coming somewhere down the line, in the mean time Abyssals will be the best choice for Demons, and depending on what you have either Orcs (Marauder-heavy) or Abyssal Dwarves (Warrior-heavy) would suffice as WoC for the time being. As you'll be proxying anyway, I wouldn't shy away from mixing lists (sticking to the 25% limit, any Evil and Neutral lists can ally) to get closer to the feel that matches your collection.

From the small hints mattjgilbert offered, i wouldn't expect marks to be included...which makes me sad. Might have to house rule those.

Reality is a nice place to visit, but I'd hate to live there.

Or proxy the marks to an extent via magic items. I'm waiting with baited breath to see the Not-WoC list, especially if they give it a standard footprint instead of an oversized unit footprint as Orcs have.

I honestly think they should be an oversized footprint to match not only GW but also Avatars of War and Gamezone and other not-chaos manufacturers.

Additionally, oversized footprints are a slight detriment as you can get more units to be able to charge. (from the front; 3 normal sized units can charge 1 oversized unit; only 2 normal sized units could charge 1 normal sized unit)

Mainly what I want is an infantry unit in KoW to have 3+ Melee, 5+ Defense, and +1 Crushing Strength.

Huh, I guess not. Basic Ogre Warriors have that exact line, but are large infantry, not basic infantry. Still, a six man Horde has 18 swings, whih about what a regiment of elite infantry would have, right?

So Chaos warriors would likely have a bit higher nerve then, to show their staying power?

They're simply amazing models, and I'd love to have a reason to pick some up if I ever see them cheap (and I mean, why would anybody be selling WFB models cheap these days?)

That's my thinking. Like 16/18 or something - puts them inbetween an Ogre hrode and a Giant in terms of nerve. Still less attacks than Ogre horde but more survivable.
