Complete silly question but just wondering can any space marine chapter take crusader squads?

Only if you're using the Black Templars tactics. You don't have to be literally playing Black Templars painted as Black Templars, but you need to pick their chapter tactics. That means no psykers, but you get Crusader Squads and the rest of the BT bonuses.

Alright cool. My daughter wants to have a go and I used to play templars but she wants to paint them a different colour. So she'll be able to use them to learn at least.
Wouldn't have to take the emperors champ though would she?

You no longer are required to take the Emperor's Champion in a Black Templar's list.

Does she have to take the Emperor's Champion? No. But the EC is a very good character to take, as he got a lot better in the new codex.

For the moment starting her with a 500 point army and going from there. At that point range the EC is too costly. He is definitely a better character then he was when I used to play.

At 500, I'd say that a bare-bones Chaplain is all you need, and it's fluffy! Or cheap captain Marshal with a power weapon.

If you are taking a large crusader squad, I would definitely go with the chaplain. He is a force multiplier and his bonus of extra attacks and fearless get better the larger his squad is.

I would also look at either giving the chappy a powerfist or giving a powerfist to one of the marines in the squad. But leave the Sword Brother with a power weapon.
