We know that a regular Dreadnought is controlled by the Marine in the Sarcophagus. But if that Dreadnought turned to Chaos would its chassis be possessed by a Daemon that is a separate entity to the Marine already in control? And if it does, which one will take control?

It's entirely possible for a dreadnought to be possessed by a demon, just like it's possible for a regular marine to be possessed. As to who would be in control... It depends on the will power of the marine in question

If the daemon controls the chassis then there's not much the marine could do about it, the daemon could just unplug him.

I was under the impression that the Chaos Dreadnought's "replacement," the Helbrute, was a Daemon Engine. Proper Chaos Dreads can still be possessed by Daemons though, as can any Chaos vehicle. There definitely used to be rules for it, but I don't know if that vehicle upgrade was taken out when everything useful got stripped from CSM...

I think they created Helbrutes when they rebranded CSM so that they had their own style and flavor as opposed to just spiky SM, which is what they basically were back in 3rd and 4th edition. I do enjoy my old metal dreads, though.

No they are not generally daemon engines proper. Certainly not rules-wise. Their outward appearance merely reflects the insanity of the occupant. Metaphor becomes literal when you spend too long exposed to the warp.

Note, that Heldrakes DO count as daemon engines, even though they are technically crewed by a space marine. In this case, the machine has become so dominated by the daemonic spirit the pilot has become a vestigial part, trapped inside and dominated by the daemon. I suppose a Hellbrute could undergo the same process.

Lastly, I don't see why a Hellbrute's chassis couldn't be daemonically possessed and work in a way such as forge/mauler fiends, etc (i.e. without requiring an occupant). Sadly there would be no way to reflect this rules-wise.
