So It's been 2 years and I figure my heldrake has been grey plastic long enough.

My only real question is: with all that edging, would it be better to spray red and pick out edging in metal, or to spray metal and fill in the red parts?

Red and any flamey texturing you feel like, and then the metal.
Painting into recesses over a metallic paint is a pain.

Hence why you left it as plastic

But yes, I'd airbrush the whole thing, do your gradients/whatever to make it look amazing, spray over every edge in dark brown (or black), paint all the edges in gold (or silver)

This will sound crazy, but use a metallic sharpie for the trim. They have gold, silver, and bronze. It looks clean because there isn't any brush strokes and I did the first in a few hours, my second and third took about an hour each. If the tip starts to dry out close the cap and give it a gentle shake then start again. 1 should do it but they come in 2 packs normally or a 3 pack of each color.

If you spray a matte overcoat on your models this won't work. For some reason it changes the color of it drastically. Although the bronze with matte coat gives a nice Nurgle effect.

Exalted! I may try the sharpie trick on my 'drake! My only concern is whether it will rub off easily...

It can come off if your fingers are clammy. It can also come off onto other models.
Sealing with gloss should be okay though.

Now, will the sharpie accept GW and ArmyPainter washes? My Word Bearers are all heavily washed to get really dark reds and metals, and super bright silver on only one model would look silly.

I didn't seal them and had no issues as long as you let it sit. It will smudge if you grab it while wet, so just treat it as paint

I heavily eased mine and it works fine. I even used GW technical on it and it works fine
