I get the muscular chest plates cause of its artisan, strength, beauty and all that vibe but I'm not really sure why they have the flayed chest pieces as seen on Astorath, the upgrade sprue and the new chaplain?
Is it supposed to represent the Blood Angels decaying because of the red thirst/black rage or something? That's supposed to be a strict secret so don't know why they'd advertise it.
Why would they model their armour like that?

Its a demonstration of mortality, like a chaplain's skull helm.
More importantly Bram Stokers Dracula as directed by Francis Ford Coppola in 1992. In that movie movie (wich i love) theres a scene with Dracula in skinless red armor. Thats where the inspiration came from.

Mostly just ceremonial armor for officers. Contrary to popular belief, Greek soldiers primarily wore a metal/cloth composite armor instead of male nippleplate.

It is probably to make them more terrifying. Though, up until recently, only Mephiston and Astorath had the flayed armor.

Well people realized that anything other than one smooth plate was actually worse at protecting you. You want no places where the enemy attack can get caught and deliver its full force, you want it to skip off to one side.
Also why "Boob Plate" is a horrible idea.

Boob plate is a fine theory. Shaped armour redirects force, so you can deflect rather than absorb attacks. Modern tanks use this.
Of course, instead of deflecting that force, boobplate directs it inwards instead, towards the heart. Needless to say, that is a bad idea.
