So I currently have a foot Command Squad with four Plasmaguns. What I am wondering is if switching the Plasmaguns out for Gravguns would be worth it. Plasma is more versatile, but Grav is one of the best things for dealing with stuff like MCs or GCs.

Well, any turn you move, Plasma is probably better. By which I mean more likely to cause damage to something. Any turn you sit still, and your target is within 18", Grav would be better, against something with a 3+ or better armour save.
So how often does that happen in your games? I would find it difficult to reliably have a non-moving, foot-based model be within 18" of something.
Grav is simply at its best on a relentless / slow and purposeful platform.

I do like to stay mobile, so I think I will keep my Plasmaguns. I am trying to find a spot to put Grav in my army. I do have a Grav bike squad too, but I don't really use them (Crimson Fists don't need no bikes!). I might get a Grav Centurion Squad.
They need to make a Grav Cannon Razorback! I would also be okay with Terminators with Gravguns. Grav for everyone (Imperials only!).

Gravcannons would be a good option to add to attack bikes. People would probably gripe about how nothing that maneuverable should have gravcannons, but make it an expensive upgrade (like 30 ppm to replace the heavy bolter with a gravcannon and gravamp)
To go back to the command squad, Dark Angels have a banner that can make their command squad relentless. They should always take grav in their command squads because of this. Maybe you should ally in some Dark Angels to take advantage of this.

I had forgotten about the Attack Bike. That would definitely be a good option. I wouldn't mind Land Speeders being able to take a Grav Cannon either.
I won't ally in any DA since one of the principle players that I battle is a DA player.
