I have been looking for Table Top rules for a Last Stand Scenario but so far I can only find rules that don't make sense for the 7th rule set. I will continue to look myself but if anyone knows of a decent updated rule set I would very much appreciate a link.

Use Unbound and just waste everything on HQ's; it won't even matter what army they're from. Your opponent would ordinarily use a swarm army, preferably Tyranids or Orks, but Blobguard can work as well for the scenario.

This. Or, you could also run unbound elites and HQs (things like Chapter Master and Sanguinary Guard with a boatload of other HQs)

To quote a fictional character... "Let's make this fun!"

There was a story in the SM omnibus where a single kroot killed 2-3 marines then ate their gene seed and became a Kroot-startes.

We must all join the Kroot-startes...

Single wound models simply don't feel right for a last stand scenario.

Why not?

Yeah, when i read the small novel that is the Death Guard unit options and think about resolving the attacks from a melee-oriented min size death guard squad, the thing that springs to mind is "Accessible!"

You're not. If you're worried about your opponent using 'fake' rules, you're having fun the wrong way. This hobby isn't about rules. It's about buying Citadel miniatures.

Please report to your nearest GW store for attitude readjustment. Take your wallet.
