I'm not much for trying to put together one-trick pony combos, but I'm curious to see what could be done with a "ramboat" sort of list - using Captain Oircunn in a Decimator to make a 100 pt. list focused around running into close-quarter/ramming.

This is what I have at the moment:

Captain Oicunn (Decimator) + Predator + Intelligence Agent + Navigator + Ysanne Isard + Plasma Torpedoes + Dauntless title + Engine Upgrade
Colonel Jendon (Lambda) + Fire-Control System + Weapons Engineer + Saboteur + ST-321 title + Anti-Pursuit Lasers

The problem I had with a similar list was keeping the Lambda close enough to the Decimator to be effective. Chasing down ships, the Decimator had to constantly manuevering in a way the shuttle couldn't keep up. I had been considering Captain Kagi (Lambda) + Rebel Captive (instead of Saboteur), but the opponent isn't FORCED to shoot at the shuttle like they would be with someone like Biggs. Though Rebel Captive on the Decimator was doing nicely stressing Leebo/Dash (YT-2400) so it made it easy enough to bash it to death in the last game I played (though the Falcon w/ Chewie escaped my grasp).

This isn't for a tournament, just for playing about, but I'm curious how strong I could get the Captain Oicunn build up to.

Dauntless and Daredevil is a nice option. It double-stresses you, but because Daredevil is a maneuver, not a boost, you can voluntarily collide with it.

Alternatively, consider Intimidation.

I'm not convinced that Colonel Jendon is adding much; yes, you get a 'free target lock' you can pass to Captain Oicunn, but you've already got a 1-die reroll with predator and you can't reroll a reroll.

I think Oicunn works best with a small TIE swarm in tow - you can force an opponent to break formation and/or pin them in place, damage them and (with intimidation) cut their agility to boot.

Yeah, the Lambda can certainly be replaced, it was just a carry-over from the first game (2 big ships vs. 2 big ships), which also happened to be the first time I had actually run a Lambda (wasn't impressed with it much).

I had also been considering Expose, but I'm not sure if can be loaded as the Decimator has 0 agility already.

It can be taken. One of the Decimator Builds I generally see is Rear Admiral Chireneu, Expose, Experimental Interface. This lets you increase your dice, re-roll blanks and convert a focus.
