First, does anything in the fluff specify if the barrel on a lasgun is open, or if it has some sort of focus at the end? I'm debating whether or not I should drill out my barrels like I do with bolters, I'm leaning towards no.
Next, what all kits come with guard plasma rifles, and how many? Am I better off buying the metal ones if I want a lot of plasma? Same for melta.
Last, how hard is it to fit marine guns onto guard? Is the size off, or about right? I have tons of spare melta and plasma sitting around and can easily get more.

lasguns are essentially smaller, weaker lascannons, so yes. they are open.

When I did guard, It took a little doing to put marine melta and plasma in the hands of the guard, but it was not too bad. I would try one as a test and see what you think.

I wouldn't drill lasgun barrels, too small to really be worth the effort. Bolt guns and up yes always.

You open your Lascannon barrels? Interesting, I always thought they'd end in some kind of lense, so I left them closed. I'm going to poke into that now.
