Ive seen some posts of some minis made of greenstuf , but what is the whole 15mm and how do you go about sculpting the minis as i see you can do whatever you want, that being sayd.....how do you play with them?

It's approximate to 1:100 scale.
There's loads of games out there that use it.

15mm is just a scale, it's the height of the model from feet to eyes. Warhammer for example uses 28mm scale, although it seems to be raising...

Probably means a link to the posts you've seen.

And, yeah, as said above, 15mm is just a scale to which models are sculpted. Some games systems use it. Others, like 40k, use 28mm. Some use 32mm, like Malifaux.

As for how you get into sculpting... well, that's a whole thing and there others far better placed to instruct. Like with painting, though, there's loads of tutorials on the web.
