I'm just venturing into 40k and play orks. Moving forward I would love to convert and use a renegade knight in my list as chaos can be taken as an ally of convenience. Just wondering what kind of list would work best with a renegade knight?

Well, I'd probably pair it with a fast assault army, like a trukkspam or Blitz Brigade list which would keep up with him.

Definitely want that all melee build tho. Idk if it's actually good but flipping land raiders at people is too fething orky to pass up.

"Got you, Yugi! Your Rubric Marines can't fall back because I have declared the tertiary kaptaris ka'tah stance two, after the secondary dacatarai ka'tah last turn!"

"So you think, Kaiba! I declared my Thousand Sons the cult of Duplicity, which means all my psykers have access to the Sorcerous Facade power! Furthermore I will spend 8 Cabal Points to invoke Cabbalistic Focus, causing the rubrics to appear behind your custodes! The Vengeance for the Wronged and Sorcerous Fullisade stratagems along with the Malefic Maelstrom infernal pact evoked earlier in the command phase allows me to double their firepower, letting me wound on 2s and 3s!"

"you think it is you who has gotten me, yugi, but it is I who have gotten you! I declare the ever-vigilant stratagem to attack your rubrics with my custodes' ranged weapons, which with the new codex are now DAMAGE 2!!"

"...which leads you straight into my trap, Kaiba, you see I now declare the stratagem Implacable Automata, reducing all damage from your attacks by 1 and triggering my All is Dust special rule!"

Anyone have any thoughts on the best knight loadout to complement orks?

I was thinking the thermal cannon, since orks dont have melta, and low access to ranged AP1/2.

Would a weirdboy with cursed earth be usefull, or does it not work on the knight?

Another buff of the gauntlet, or intentionally charging through terrain, is that when you strike at I1, you can stomp first. This can be huuuuge, as if you charged say, a rhino through terrain you are now I1. Sure you could punch it out with your fist or chainsword, or even your basic S10 attacks if you don't have D weapons. If you stomp first, you can stomp around the knight and hit other units and whatnot, then you can easily finish off whatever you charged.

Juat use an orkanaut and say the chaos guys tricked the orks with some warp magic and made the knight look like an orkanaut. I' try a shooty one, with 24 S6 ap3 rending shots. Orks suck at shooting, so built them for assault and let the knight deal with the sooting.
