I am somewhat unfamiliar with nid flyff, having never met any nnid players. My question is: how much adaption can tyranids achieve?
Could they theoretically just take one of their bio titans and double up on its carapace armour, and completely reposition its weapons?
How easy is it for them to make entierly new bioforms or biomorphs?

In simple words; the Hive Mind can mix and match what it has, but it can't create something out of nothing.
This is why the Hive Mind wants to eat new species to absorb their genes, and even eats its own hive fleets at times to share the genetic material with the others. The Hive Mind is essentially playing Spore, and eating other species gives it more DNA and parts.

Just so.
You'll notice that all tyranids (at least, the latest generation of models) have the same basic 'rules' - 6 limbs, dorsal carapace, 6 'places' segmented on the cranium, etc.
At the same time, thickening carapace armour is an easy enough 'trick', and tyranids to pull this in response to many battlefield circumstances. "Stonecrusher" carnifex, for example, have a sufficiently heavier carapace to qualify for a 2+ save, and two massive rams protruding for smashing down buildings.
Completely relocating limbs, on the other hand, is more awkward. Moving weapons is possible because big guns are often secondary symbiotes grafted on (like the exocrine's main cannon).

Pretty cool. Hiw common is the trait of retaining rhe memories of a previous incarnation of a particular organism?
Is ut something that commonly occurs in leader organisms like Tyrants and Dominatrices, or is it a rare mutation?

And it is also being suggested that certain other creatures are reincarnated as well somehow. The Beastlord of Tartaros (massive Carnifex) was supposedly an "ancient horror of the Hive Fleets" with aeons of experience. I believe that several incarnations of Deathleaper (or some other "advanced" Lictor) stalked the Cannoness on Lysios for some time before killing her (she killed several of them, and had apparently "met" it some years previously as well).

All Tyranids are "reincarnated". When a Hive Fleet takes a planet, all the bugs on the ground/in the skies are eaten (either by Ripper Swarms or by diving into the digestive pools) and sucked back up into the orbiting Hive Ships via the Capillary Towers. There, the biomass of those bugs is used to move the Fleet on to the next target, whereupon the spawning pools in the Hive Ships create an entirely new army of bugs to take the planet.
This is also why the Tyranids are best-fought in deep space. They burn a lot of resources moving from system to system, and a Hive Fleet that has not fed recently may be low on biomass reserves, and so cannot spawn sufficient bioforms to defend the Hive Ships.

Do they, though? Proponents of RL thermodynamics say they do but 40k in general has never bothered much with physics.
They survived the incredibly massive intergalactic distance, so interstellar travel should be a pittance.

Tyranids are best fought before they enter the galaxy and are low in biomass from the intergalactic travel, but once they start eating their way through the galaxy their forces increase exponentially.

The Hive Mind basically does forced, directed and accelerated mutation to overcome whatever environemntal issue its presented with. Be that the particular environmental conditions of a planet or area of space or of a particular species that it encounters.
It meets a really shooty race and it evolves thicker armour plates.
It meets a ridiculously hot place and it evovles cooling vanes or bio-AC units or whatever.
