With the proliferation of super heavy walkers and guarguantuan creatures, what units do you take to deal with these? I play space marines and IG and am thinking of starting some knights or skitarii

For gargantuans, you simply can't beat grav. Centurions are best for sheer volume of fire, and even at 275 for a unit of 3 in a pod they will easily make their points back, especially with the draft FAQ getting rid of the toe-in-cover. For vehicles, stern guard with melts works well, but if you can close to CC TH/SS terminators will come out on top of most walkers.

Kataphron Destroyers with Grav cannons.
A horde of Skitarii Vanguard, and luck for 6's.
Kataphron Breachers with Arc Rifles, in a Holy Requisitioner formation. (able to Deepstrike that way).
Sicarian Infiltrators with a Phase Taser.

You might as well get torsion instead of Arc Rifles, it would work the same and you could also wreck some Wraithknights too.

True, but the reliability of the Arc Rifles, due to Rapid fire, had me decide on those over the Torsion.

True, but the reliability of the Arc Rifles, due to Rapid fire, had me decide on those over the Torsion.
I've had little success with torsion, it looks good on paper, but 150 points for three shots, two of which will hit if using canticles, one of which will probably wound/pen. That wound always seems to fail to get past an invuln save. I stopped using them in favour of more grav destroyers or arch-rifles.

+1 for vanguard. Between vanguard and rustalkers with fleshbane and auto wound on 6's, I've killed 3 wraithknights so far with just them alone.

Either the Cerastus Knight-Lancer or Cerastus Knight-Atrapos. The Lancer gets an all important +1 Initiative when it charges, meaning it gets to swing at the same time as a Wraithknight (and before other Imperial Knight variants). It also makes enemy super-heavies/gargantuan creatures suffer a -1 penalty to hit, and you get an invulnerable save in close combat. Its definitely the best Melee Knight.
The Knight-Atrapos gets a Graviton Singularity Cannon (black hole gun) and a giant Lascutter (ie a lightsaber lol). Its the only Knight with ranged strength D with its Lascutter (albeit 8" range, though it is twin-linked against Super-Heavies/GMC's), and its Graviton Gun has a chance to resolve using the Vortex rule. It also comes with a Flare Shield, which helps protect it against conventional ranged attacks (drops the Strength of weapons by -1 on the facing its on, doesn't affect Haywire or Destroyer weapons though).

Its a hard call on what is best for dealing with them. The fastest i've ever killed a hard core superheavy was with a unit of 10 Repentia that had a priest in it. They took out a fully loaded stompa in 1 round of combat.... but if anyone knows what they are/can do then there is no way they make it into combat.
Until the grenade changes are official, IG veterans with the demo team upgrade are good. and at least they're cheap-ish.
For ranged, pack of melta for vehicles and packs of grav for creatures.

The Iron clad dreadnought/stormraven combination can be quite effective here - combined with the storm raven's Concussive missiles, 6 attacks with armourbane or a dreadnought thunderhammer striking at I4 against I2 can be quite effective.
Bonus points if you can load a culexus in at the same time to negate invisibility, though for that you'll need a sky shield.

The Lancer gets an all important +1 Initiative when it charges, meaning it gets to swing at the same time as a Wraithknight
I believe it's ranged attack with the lance is also Concussive, giving you two chances to swing first, or to swing simultaneously even if charging into cover.

A three man assault centurion squad is pretty effective against super heavies. Twin linked meltas are always great. I run 3 in a drop pod, as it ties in with my army, but they are pretty effective in a storm raven as well. Get them in assault and they just shred any armor, and adding a chaplain for the reroll on the charge is a fantastic addition as well

legion glaive superheavy tank, d3+3 auto wounds/glances or hits against a superheavy or GMC that it hits, if they can jink they dont get it and its immune to invisible, buy some laser destroyer sponsons and you can on a good day you can maul a warhound badly.
the warlord and reaver are larger challenges but thats only because if they shoot first there going to kill way more then there points in models cause reaver/warlord

Sagittar and Ulator Macro engines.

(Although given they are not Knights and Skitarii, the macro engines can actually be taken as Lords of War for Skitarii armies, and the Secutarii are, in 30k, foot sloggers of the Titan legions).

Do it! I love the Marauder Destroyer. It doesn't kill much but the psychological effect is immense! Your enemy will move heaven and earth to stay out of its way or throw bullets ineffectually in the air in a desperate attempt to kill it. No other superheavy I've seen has that effect.

Honestly when it comes down to it...in huge points apoc games sterngard are the best choice. 10 Ultra marine melta guns CAN NOT FAIL. When it comes to gargantuan creatures. A group of dreadknights works very well - obvious grav cannons with amp too. I do kind of like a 5 man unit of las rocket crimson fist centurions - 5 TL LC and rockets with tank hunters. Cast invis on them and rack up the hull points.
Another sweet trick is to take an armored 3 man predator squad (tank/monster hunter) take auto cannons and heavy bolters on each - use tiggy as you warlord to grant rending warlord trait - that can do some damage vs anything and its under 300 points  for the pred squad.

I'm probably going to do a conversion off of a Do-217 J, if I can find a 1/48 kit. The sheer number of guns and bombs means it's amazing against infantry, even if it doens't do too hot against most big things. It could glance a Baneblade to death from the rear, I guess, maybe get some pens. Actually, I guess it can theoretically kill a Knight while it's at it, as long as it can shoot at something that isn't front armor.

Oooh a converted Dornier would look nice, I personally used a Vickers Valiant.
You want the Missiles as well and yes it makes this a very expensive LOW but it helps to solidify it as a threat to your enemy; blow your load upon arrival against light armour, shoot other things with your autocannons, assault cannons and heavy bolters (remember its a superheavy so benefits from the weapons rulings - also its a flyer so the top turret can be used as if its rolling).
Infantry and light armour are its best targets though.
