I was doing similar and trying to find uses for the second beastlord's points, as he isn't part of the FURIOUS formation and so liable to be a bit confusing. Most of my solutions were adding a chariot or more ungors ... OH OH OH: Wargor Standard Bearer ftw - Salvage

Oh yes! Exchanging the second Beastlord for a Wargor Standard Bearer would boost the list greatly!

Typically they're just Bestigor or another fancy beastman model + big banner. Google search for "Wargor BSB" and you should find many examples. So, I may or may not have just purchased a full bullgor stampede formation. So how should I run the minotaur units? 1 greataxe, 1 drummer and 1 standard?

Well I run them with greataxes, banners, and shields. They all get to attack with the greataxe since you choose a weapon set for the unit.

Orks about 15000-16000 mostly unpainted but slowly being worked on
Militarum Tempestus about 2000 points just built
Inquisition about 2000 points unpainted
Officio Assassinorum 570 unpainted

Buddy, this really is a non-issue as Bestigor is the master race, so filthy bullgors really shouldn't be of the question.
Here is my personal list:
1000
1-BL
2-GBS
2x 10- Bestigors
3x 10- Gors
10- Untou- I mean Ungors
Furious Bray Herd Formation
(All insults were purely for comedic purposes, but Bestigor still is master race)

I will run mine like this. Note that the standard bearer and drummer still attack with great axes - you choose a weapon for the whole unit, a standard bearer and musician don't change their weapons.
An argument could also be made for Bullgors with shields - I frankly don't know what is best. Great axes get +1 rend, shields get +1 save. It might just come down to a matter of preference.
